CHICKEN – BROCCOLI BAKE
3-4 c cooked chicken, diced
1/2 tsp curry powder
2 (10oz ) pkg frozen chopped broccoli
½ c grated Parmesan cheese
2 cans cream of chicken soups
½ c corn muffin mix (dry from box)
1 c mayonnaise
¼ c butter
1 tsp lemon juice
almonds (if desired)
- Cook broccoli; just bring to a boil. Drain. Arrange in a greased 3 qt dish.
- Place chicken on top and cover with mixture of soup, mayonnaise, lemon juice and curry powder. Top with corn muffin mix, cheese, dots of butter and almonds. Bake at 325 degrees for 45-55 minutes.
- This can be made ahead and frozen, but it should be thawed in the refrigerator before baking. If frozen, do not add corn muffin mix, cheese or almonds until thawed and ready for the oven.
